A laboratory that communicates Japan is food culture was set up in the forest planted at the birthplace of Miwa somen noodles, a tradition spanning 1200 years. Tradition is not protective; rather, it is about continuing to take on new challenges. An architectural structure worthy of a hundred years was sought as the center for transmitting new culture involving the local community.
